A Simple Shrimp Curry

Ingredients
500 gms Shrimp
1 large onion sliced
1 large tomato diced small
1 tbsp green coriander leaves
1tbsp ball of tamarind (dissolved in water)
Salt to taste
2 tbsp cooking oil
1 tbsp rice flour or 1 cup rice water (kanji)

Masala Paste: Grind the following
1 large piece of wet coconut (2 tbsp unsweetened desiccated coconut)
¼ tsp turmeric powder
1 tbsp coriander seeds (dhania)
½ tbsp cumin seeds (jeera)
1 tbsp Kashmiri chili powder (6-7 Dried red Kashmiri Chillis)
5-6 flakes of garlic

Method
1. Heat 2 tbsp oil in a cooking vessel.
2. Add sliced onions to it and fry the onions until translucent.
3. Now add the diced tomatoes and saute until tomatoes turn pulpy.
4. Next add the ground masala to the pan. Fry for 4-5 mins or until the oil starts to leave the mixture.
5. Add the shrimp to the mix and stir till the shrimp start to change colour.
6. The tamarind juice and the rice water are to be added next. Adjust the amount of water as per you preferred consistency.
   NOTE- If using rice flour, dissolve it along with the tamarind. Then add water as per you preferred consistency.
7. Add salt to taste
8. Allow to cook on a slow flame. When shrimp are cooked, garnish with coriander.
9. Serve hot on a bed of rice or with bread
