Balti Chicken or Bucket Chicken
Balti chicken or Bucket chicken is the name given to this Chicken Curry that is found in many roadside eateries or "Dhabas" that adorn most of the Indian highways. It's a simple gravy that has a comfortable feel, that is served in tiny buckets..hence the name. :)
Ingredients
700 gms boneless chicken
2 onions diced small
1 tbsp ginger-garlic paste
2 tomatoes chopped
1 tsp Kashmiri chili powder
1/4 tsp turmeric
1/2 tsp coriander powder
1 1/2 tsp dried fenugreek leaves (Kasuri Methi)
1 cup water
Salt to taste
1 cup coriander chopped
1-2 green chilies diced (optional)
2 tbsp oil
Method
- Heat oil in a hot pan
- Add the diced onions and fry until all are light brown
- Add ginger- garlic paste and sauté for 3-4 minutes
- Now add tomatoes and cook until tomatoes become pulpy and most of the water has evaporated.
- Now add the turmeric, Kashmiri chili powder, coriander powder and dried fenugreek leaves.
- Fry until the oil leaves the sides of the pan.
- Now add the chicken and stir well for about 1-2 minutes until completely coated with the masala mix.
- Add water and salt to taste and cook chicken until done.
- Garnish with coriander and green chilies (latter is optional)
- Serve hot with rice or bread.
