Kerala Style Roasted Masala Prawns/ Chemmeen Ulathiyathu
When you think spicy seafood, think Kerala Roasted Masala Prawns. Inspired by Veena's Curryworld, and my love for seafood, I so had to make this. Of course I cut down the spice levels for myself and the family. It turned out better than expected. Hey, I even got the thumbs up from the big boss herself...my wife!
Ingredients
500 gms Prawns (remove shell and devein). Salt and keep aside
To be ground to a fine paste
1 tbsp Kashmiri Chilli powder
1/2 tsp Regular Chilli powder (cayenne will do fine)
3-4 green chillies
2 inch piece of ginger
Some curry leaves
1 level tsp salt
2-3 tbsp coconut oil
1/2 cup curry leaves
Salt to taste
Lemon juice to your taste
Method
1. In a heated pan (preferably non stick), add the ground masala paste and a little water.
2. Add the salted Prawns to the pan. Ensure that there is enough water to cover the Prawns.
3. When the contents in the pans start to boil, lower the flame to medium and begin stirring.
4. Continue stirring until almost all the water has dried up. Now add curry leaves and a little coconut oil.
5. Keep adding little coconut oil and curry leaves at regular intervals until the prawn mixture starts to darken. The roasting process has begun. Check for salt and add salt to taste.
(You might not need to add salt cause of the amount added earlier)
6. Continue to add coconut oil until the prawn mix is almost dark brown and semi dry.
7. Remove from the pan. Sprinkle some lemon juice. Serve hot with rotis or as a side dish.
