Sweet, Tangy And Spicy Pork Ribs from an Oven

Just this once, I wanted to add an Indian touch to my BBQ.  What better than a tangy, spicy and sweet melange created using Indian Tamarind Chutney, Tomato Ketchup and good ol' honey.I must say at the end of it all the family was not disappointed.

However, due to inclement weather conditions and scarcity of time, I returned to the days of apartment life. Yes, it's ribs from an oven.

Ingredients
1 Rack of pork ribs (of your choice)
1tbsp Salt
1tbsp pepper
1tsp smoked paprika
½ tbsp garlic powder
Yellow Mustard or olive oil (acts as a binder)

For the sauce/basting (Easy)
½ cup Tamarind Chutney (available at most Indian Stores)
¼ cup Tomato ketchup
1tsp honey

Method
1. Rub the ribs with mustard or olive oil and then with the rub. Coat evenly.
2. Wrap in foil carefully, keeping in mind that there will be juices released during the baking process.
3. Place in a oven at 250F for 2hours
4. After 2 hours, remove ribs from the oven. Wait until cool, and then unwrap the ribs.
5. Carefully Collect the juices from the foil.
6. Baste the ribs with the sauces and place again in a tray in the oven with a temp around 490F, for about 15mins.
7. Remove the ribs when its starts to get a little char on the top (Careful not to BURN them).

[In the interim, combine the juices from the foil and the remainder of the sauce mix.]

8. When the slightly charred rubs are removed from the oven, baste it with the sauce/juice mix and serve hot.

OPTIONAL: You can grill this over your gas or Charcoal BBQ too. I would recommend you marinate the ribs for about 3-4hrs or overnight.
