Carrot Halwa (Gajjar Ka Halwa)


Ingredients
5 cups Milk
1/2lb carrots grated fine
5 tablespoons Ghee
1tbsp Butter
1tbsp light Corn Syrup
1/2cup sugar
1/3 cup raisins
1tsp cardamoms (ground)


Method
Using a heavy bottomed pan, boil the carrots in the milk over high heat until the liquid has evaporated. Stir occasionally to avoid the mixture sticking to the bottom of the pan.
Add the ghee , butter , corn syrup, cardamoms and raisins. Stir until butter and ghee have melted until the mixture starts to leave the sides of the pan.

Pour into a shallow dish and spread evenly . Cut into slices and serve warm or cold.



*Alternate Method Using 300ml of Condensed milk

 Ingredients

1/2lb carrots grated fine
1 tin Sweetened Condensed Milk (300ml)
4tbsp Ghee1/3 cup raisins 
1tsp cardamoms (ground)
  
Method
Using a heavy bottomed pan, add the ghee to the carrots and cook until carrots are tended. To this add the condensed milk and cardamoms and raisins. Stir until butter and ghee have melted until the mixture starts to leave the sides of the pan. Stir occasionally to avoid the mixture sticking to the bottom of the pan.


Pour into a shallow dish and spread evenly . Cut into slices and serve warm or cold.

P.S You can add extra sugar to the mixture, if you find that the mixture is not as sweet as you like it.
