Dragon Chicken (Hakka Style)




 
Ingredients
Boneless Chicken - 500 grams (cut into small cubes or strips)
Spring Onion for garnishing (finely chopped)
Oil for Deep frying
 
Marinade

Dark Soy Sauce - 2 tsp
Red Chilli Paste - 1 tbsp
Egg - 1 whipped
Rice flour /Maida - 1/2 cup
Corn Flour / Corn Starch - 1/4 cup
Ginger Garlic Paste  - 1 tbsp
Pepper - 1 tsp
Salt to taste
 

Sauce Oil - 2 tbsp
Dry Red Chilli - 3
Cashews - 3-4 tbsp broken into small pieces
Onion - 1 large sliced thinly
Capsicum / Bell Peppers - 1 sliced thinly
Ginger  - 1 tspn (finely chopped)
Garlic- 1 tbsp (finely chopped)
Red Chilli Sauce or Paste - 1 tbsp (I used Sriracha Sauce
Tomato Ketchup - 1/4 cup
Dark Soy sauce - 1 tbsp

Salt to taste Sugar - 1-2 tsp (depending on how sweet you like it)

Method
Take chicken in a bowl marinade the chicken with the ingredients mentioned above. Mix well and let it marinate for 15-30mins. Heat oil in a wok or deep pan to deep fry the chicken. wait until oil is hot enough and then deep fry the marinated chicken until golden brown.

Now heat oil in a frying pan. Add in dry red chilli and cashews and fry till the cashew turn golden brown. Remove and keep aside the cashews for garnishing as the latter will burn if kept in the oil for too long.

In the same oil add in onions for fry until onions are translucent. Add in ginger,  garlic and saute for a min to rid the 2 latter ingredients of their raw flavour. take care not to burn the garlic.

Now add in red chilli paste/ Sriracha sauce, dark soy sauce, tomato ketchup, salt, sugar and mix well.
Cook this for a couple of minutes till the sauce thickens.

Now add in the fried chicken and toss well in the sauce.  

Add bell peppers and toss well in the oil and cook for another minute

Garnish the dish with spring onion and the fried cashews.
Serve hot. 

P.S - The deep fried chicken in itself has so much flavor that it can be served as a starter with a shezuan dipping sauce !

Oh Yeah..I added the spring onions after I took the picture..in case you are wondering :D
