Mumbai East Indian Prawn Sarpatel

 Ingredients
400 gms prawns
3tbsp oil
1½ tbsp bottle masala
1½ inch ginger julienne
1 garlic pod (8-10 cloves)
2tbsp vinegar
3-4 green chilies julienne
2tbsp water

Method
1. Heat the oil in a pan.
2. When oil is hot, add the cut chilies, garlic and ginger and fry a for a little while.
3. On medium heat , now add the prawns  and bottle masala and fry till prawns almost cooked.

4. Cover the pan with a lid and add the little water and allow the prawns to cook more.
5. Now add the vinegar to the pan and cook (pan still covered) a little more
6. Remove from stove and then serve

P.S. Watch for how much water is released from the prawns during the cooking process and add water accordingly. In addition, it would be best to make this a day or two earlier to allow the masala to soak into the prawns.
This recipe has been adapted from the East Indian Cook Book II by Ms. Dorothy Rodrigues.
