Basa Fish Fried in Green Masala (Mumbai East Indian Style)


Ingredients
400gms Basa Fillets or Pomfrets or shark

Grind
1bunch coriander (approx 2 cups)
1"pc Ginger
4 cloves garlic
1/4 cup scraped coconut or desiccated coconut
2 green chilies
1 onion
1tbsp tamarind

Salt and Sugar to taste
1 egg to be whisked
Breadcrumbs for coating
Sufficient oil for shallow frying 

Method 
PART I  (Marination)
1. Cut the fillets on a slant around 2" width (or to your preference)
2. After grinding the masala, add salt and sugar to your taste preference.
3. Add the ground masala and keep place it in the refrigerator for about 20mins -1 hr to allow for the spices to soak in 
PART II
4. Break and egg into a bowl and whip it.
5. Remove the fillets from the fridge, bring it to room temperature
6. Add the whipped egg to the fillets
7. Using your hands, gently, coat the marinated fish fillets with the whisked egg
8. Individually take each fish fillet and coat with bread crumbs
9. In a hot pan, add the oil for frying and fry fish fillets in the pan on a medium flame..approx 2-3 mins per side.
10. Serve as a side with Rice and Lentils.

P.S- The whisked egg added to the fish fillets, as opposed to the traditional method, gives it an even coat of egg. It helps avoid formation of lumps in the bread crumbs when coating the fish with the latter (reduce wastage)
