Prawn Waris aka Prawn Kebabs


Ingredients
1 cup prawns

Grind
1 cup coriander
2 green chilies (add more if you need it more spicy)
3-4 cloves garlic
1inch ginger
1/4 tsp turmeric
1tsp cumin powder (roasted is best)
1/2 tsp temchi ros (EI Garam Masala or regular will do)


Salt to taste
Oil for frying

Method
1. Clean your shrimp and de-vein if necessary. Pat dry
2. Grind the above ingredients to a paste
3. Keep aside half of the ground green paste
4. Now add to the green paste, that is still in the grinder, the cup of prawns
5. Coarse grind the prawns
6. Remove from the grinder
7. Now reintroduce the ground green masala to the prawn mixture
8. Add salt to taste
9. Heat oil in a pan for shallow frying. When the oil is warm, reduce to medium heat.
10. Take a tbsp or more of the mixture and shape according to your preference
11. Shallow fry till cooked and the kebabs have firm yet spongy feel and a light brown colour.

P.S: This recipe makes for around 6 small kebabs (approx 3"). When forming the kebabs, use a little oil or water, rubbed on your hands to prevent the sticky mixture from sticking to your palms (Thanks for the tip Giselle Creado).  If you need some more crunch to the kebabs , the option of using egg and breadcrumbs is entirely your call.
