Cabbage Fugath (A Mumbai East Indian Veggie recipe)
Ingredients
500 gms cabbage chopped fine (as you can)
1chopped onion
2 green chili (chopped fine)
2tbsp oil
1tsp mustard seeds
8-10 curry leaves
salt to taste
3tbsp grated coconut
juice of 1 lemon
Coriander leaves (optional)
Method
1. Heat oil in a pan
2. Add Mustard seeds. wait for them to start sputtering
3. Add Curry leaves, onion, curry leaves and chopped green chilies.
4. Stir on high flame for a minute or two taking care not to brown the onions
5. Add the cabbage, salt and mix well
6. Cover the pan and let it cook on a low flame for 5-10minutes or until the cabbage is soft and tender.
7. Add grated coconut, coriander leaves and lemon juice.
8. Mix well and serve hot with chapatis or rice.

P.S- The cabbage in this dish can be substituted with french beans, cauliflower, etc.
