Lonvas: Mutton , Beef or Prawns
Lonvas of Mutton, Pumpkin, Beans and Cauliflower |
Ingredients
1/2 kg mutton (Beef /Prawns can be substituted)
2 tbsp Ghee
250 gms White pumpkin (peeled)
200 gms french beans
250 gms cauliflower (broken into florets)
8 flakes garlic smahsed
1 cup coconut milk
3 tbsp East Indian Bottle Masala
1tbsp Tamarind (dissolved in water)
Salt to taste
Method
Cut meat into small pieces. Using a pressure cooker, cook the meat with 1tsp of salt with a little water as possible.
In another vessel (dekchi), heat 2tbsp of ghee . Fry the crushed garlic lightly taking care not to brown it.
Next, add the bottle masala and fry for a few minutes.
Add pumpkin, french beans and cauliflower and the cooked meat along with the stock. When the pumpkin, beans and cauliflower are cooked, add the coconut milk.
Now add the tamarind dissolved in water and stir.
Add salt to taste and cook for another 10-15mins.
Options: Various other veggies can be added/replaced in this dish , like , Gawar (Cluster beans) lady fingers, raddish (goes well when using with prawns) or even papri (field beans).
