King Fish Amphade / Surmai Amphade


Ingredients
1kg Pomfret / King Fish (any white firm fish will do)
2 medium sized Onions (sliced fine)
6-8 cloves Garlic (julienne)
1" Ginger (julienne)
3-4 Green Chilies (julienne)
1tbsp Palm or regular Vinegar
1/2 cup Coconut Milk
Salt to taste
Oil for frying

Method
  1. Cut fish into slices. Salt the fish and then in a nonstick pan, add oil and fry lightly. Remove and keep aside
  2. In a separate pan , heat oil and saute onions until golden brown.
  3. Add ginger, garlic and green chilies. Saute for 2-3mins.
  4. Now add 1tbsp Bottle masala and continue to fry for another 2 mins. If needed, add little water to prevent it from burning.
  5. Then add the fried fish to the mix and the coconut milk. (You can add a little water or fish stock, if you find the gravy too thick)
  6. Add vinegar and salt to taste.
  7. Simmer for another 5 mins and then remove from heat.
  8. Serve with rice or bread.
P.S Caution- Stir carefully once fish is added so as not to break the fish pieces.
